If you were looking for a post full of lettuce and spinach, you’ll have to look elsewhere. Sure, there are a few recipes with some greens but when I make a salad, it want it to really appeal to my taste buds, not be the afterthought on the plate. There are lots of pinned salad recipes on my Pinterest boards though I haven’t made very many because of the sheer volume of ingredients for some of them. (You want avocado AND tomato AND blueberries AND cheese AND chicken?!?) I like the salads that are quite simple and yet make a nice side dish to whatever else we’re eating. Here are six recipes that I come back to over and over again:
Crunchy Asian Ramen Salad: Being a classic pitch-in dish, you’ve probably had some variation of this salad in your life. It’s super simple and I always have ramen in my pantry.
Strawberry Caprese: For a simple yet sweet twist on a few favorite flavors, I discovered that you can easily use balsamic glaze as a dressing instead of the pistachio pesto.
Greek Couscous Salad: I don’t like olives so I leave them out, but that watermelon gives your taste buds a perfect summery surprise. We eat bowls of this by itself!
Grilled BLT Salad: Have you ever grilled your lettuce before? Dearest Carl probably never wants to again (it’s rather a nerve-wracking experience when you’ve never done it), but that grill flavor really makes the salad.
Caprese Avocado Salad: This is the kind of salad that is awesome when you have some leftover grilled chicken. Throw it together for lunch or a quick dinner side dish.
Pan Crisped Deviled Egg Salad: As soon as I saw this recipe, I knew I had to make it. It’s a bit time consuming but every bite is totally worth it. I seriously made it almost every week last summer.
It’s awful nice to have some go to salads during the warm months. Makes grocery shopping for produce much easier and seasonally friendly. What salads are you looking forward to chopping up this season?
