What We’re Eating

What a nice weekend. I always say that the best weekends were the ones that were both productive and relaxing. Dearest Carl worked on the bathroom a bit and helped me fold a giant pile of laundry and I got quite a lot of writing done. It was a pretty good one and I wasn’t quite ready for it to be over. But now it’s Monday and I have a jam packed week ahead of me. So the goal today is to finish writing the massive article (half to go!), drink lots of La Croix and treat myself to dance party breaks. Not too shabby for a Monday.

I can’t tell you how excited I am to get these enchiladas back on the menu! I made them once a long time ago and have never gotten around to making them since. They’re gonna be the perfect thing to eat after a long day of wording. Later this week I’m taking dinner to my sister-in-law along with these peach bars¬†and now I kinda want to make them for myself too….

Monday: Shrimp Enchiladas
Tuesday: In The Pantry
Wednesday: Summer Sausage and Salad
Thursday: Tuna Melts and Chips
Friday: Cheese Plate for Bastille Day!
