What We’re Eating

Good morning! How was your weekend? We got home from vacation on Friday afternoon and spent the rest of the weekend doing laundry, making all the cucumber and tomato recipes we could think of and watching War and Peace. I managed to stay away from my to do list until Sunday and just enjoy the last bit of our time off. It was just enough time to get me back on top of things and ready to start the week. Today I kinda hit the ground running, picking up the Little Bears very early, but I’m starting off my Monday with freshly painted nails, a fresh pitcher of iced coffee and the determination to make it a good week. Since the solar eclipse is today, I decided today is going to be Space Week for the Little Bears and I! I have some fun activities planned around the usual work and chores which will make it a little more special than your average week.

I realized that we have yet to grill chicken this summer! I guess we’ve been so focused on burgers that it kind of slipped my mind. So we’re remedying that that this week, along with a pasta recipe I’ve been wanting to try. You can’t go wrong with cajun food! And of course there will still be cukes and tomatoes with every meal.

Monday: Breakfast Stuffed Sweet Potatoes
Tuesday: In The Pantry
Wednesday: BLT Sandwich and Chips
Thursday: Grilled Chicken and Caesar Salad
Friday: Cajun Chicken Sausage Alfredo
