What We’re Eating

Good morning! How was your weekend? Dearest Carl came down with a slight fever Friday so we spent basically all weekend at home, running tea tree oil through the diffuser and playing video games. We did upgrade our TV so he’s had some fun playing with that and I made my first cake of the year from this book. It almost felt like a holiday since we really didn’t do anything! I wouldn’t mind every weekend feeling like that, but then we wouldn’t get any house projects done and I’m itching for that upstairs bathroom.

Confession time. I’ve been craving salads and cold cut sandwiches lately. Not really sure why since that isn’t usually something I crave… I’m going to blame it on all the rich holiday eating. So this week, we’re pretending like it’s summer and we’re eating salad. And waffles because I have a waffle maker now so why not!

Monday: Carl is having dinner with the men from our church (assuming he feels up to it) so I’m indulging in my favorite ravioli ever!
Tuesday: In the Pantry
Wednesday: Chicken Avocado Salad
Thursday: Chips and Dip
Friday: Blueberry Sour Cream Waffles (from the Over Easy cookbook, pg 104)
