How was everyone’s Easter? Ours was quote prolonged with two Easter celebrations across two weekends. And if you’ve been following along for a while, you know that when somebody needs a dessert for anything, they ask me for a cake. I’m happy to oblige of course! Special occasions give me the opportunity to go all out and make something more complicated than I would on a regular bake. In the end, I was quite pleased with both of the Easter cakes I made and I thought I’d show you!
For the first Easter cake, I made this Raspberry Roll. She turned out so lovely, light and delicious. I’ve also decided I really like making these roll cakes because it seems to be the perfect amount of cake for a family gathering and I’m not taking half a cake home. Yes, it’s a hazard when there is only two of you in the house! Anyway, we really enjoyed the light sponge cake and fluffy frosting with the tart raspberry flavor woven throughout.
For the second Easter cake, I made this Strawberry Lemonade Cake. Full disclosure, when dessert time came around, I was so full I didn’t actually get to try this. But my mother-in-law who loves lemon said it was absolutely delicious and when there was half a cake left at the end of the day, she had no arguments about me leaving it at her house. I did enjoy all the fresh fruit that went into this cake and since it was pretty easy to make, I’ll be keeping the recipe in my back pocket for the next time I need something fresh and springy.
If you couldn’t tell, I’m trying to make my cakes pretty as well as delicious because I have that part down. It’s been fun to experiment with fresh fruits, chocolate and gold leaf for different cakes. Usually it’s pretty simple but I kinda love the simple rustic look anyway. Also, with all the cake baking lately, I’m pretty much back to baking a cake every weekend. Whether it’s a tiered confection or a quick snacking cake, it’s been kinda nice to be in the kitchen, listening to my audiobook and mixing up frosting again. You’ll hear no complaints from me.
