What We’re Eating

Good morning and happy first day of spring! How was your weekend? We had such a lovely time in Chicago with our family. It was a bit hard to leave, but now we’re home safe and sound and gosh am I thankful for a slow and quiet Monday. This morning’s rain just makes everything a little cozier, plus the cat dislikes thunderstorms so he’s been a little extra lovey. I’m looking forward to a day of snuggling and resting. Multiple late nights in a row are fun but they slay me.

This week has a pretty simple menu. We only have two Monday Soups left so I’m trying to choose wisely before I put my soup pot away for the summer. Also, please make the sausage pasta skillet. It’s so easy and so delicious you really have no excuse.

Monday: French Onion Soup
Tuesday: Loaded Baked Potatoes
Wednesday: Sausage Pasta Skillet
Thursday: Quiche
Friday: Pigs in a blanket and Chips
